stephanie is: starting to get hungry (finally)…
you know what i am craving soo bad right now? super spicy thai lemongrass soup. mmmmm. that would feel so good on my throat and clear my sinuses. unfortunatly, the only place i know of that makes it is a restaraunt back where we used to live in alexandria. poo.
i took my hot bath. i guess my fever caused me to put nearly pure hot water into the tub cause i ran out of hot water pretty quick. found a few bites of peach sorbet (mm my favorite) in the freezer so i ate that while in the tub. soo soothing to my throat. for a couple minutes, the only pain i had was my eyes and head – they feel like they are going to explode.
sigh. soooo bored. i can’t sleep and i can’t stand tv anymore. i can’t read cause it hurts my eyes and i can’t work on my puter cause it is too exhausting to sit up for very long.
yes yes i know whine whine bitch bitch. :b

the lemongrass soup is easy to make.. make danny do it for you.. below is the recipe that i have used.. you can leave out some of the veggies or add more. i hope you poor east coasters have easy access to thai ingredients. there is a brand called “taste of thai” that is pretty widely sold.
Ingredients
1 tablespoon vegetable oil
1″ fresh ginger root
3 scallions (green onions), chopped
2 tablespoons lemon grass, chopped
1/2 pound mushrooms, sliced
3/4 pound broccoli, cut into small chunks
2 carrots, cut into small chunks
1 quart vegetarian or chicken broth
1 – 2 tablespoons Thai red curry paste
1 tablespoon Thai chili paste
1/2 tsp salt
Pinch of black pepper
1 lemon, sliced thin
Shredded fresh basil
Method
Heat the oil in a wok or saucepan, and fry the garlic and Thai chile paste until the garlic is browned a bit. Stir-fry broccoli and carrots until crisp-tender. Remove and set aside. Fry the ginger, scallons, and lemongrass for a few minutes, then add the mushrooms and fry for another 2-3 minutes. Add the broth, red curry paste, salt, and black pepper. Bring to a boil. Reduce heat. Simmer, covered, for 5 minutes. Add broccoli and carrots. Heat briefly.
